Thousand Candles Single Vineyard Cabernet Sauvignon 2021 shiraz cabernet2021 was a great year for Cabernet Sauvignon. Our close planted vines are producing some high quality fruit. We selected the premium rows for this small batch, only 1,500 bottles produced. All fruit was gently destemmed and fermented on skins for around 21 days using natural yeasts. We were aiming for good structure, colour and fine firm tannins. Aged in 20% new oak and a selection of 1, 2 and 3 year old barriques for 9 months. Classic blackcurrant
