Distillerie et Domaines de Provence Liqueur Farigoule (Thyme) Traditional Molasses RumFarigoule is the Provencial name for thyme and an emblem of Provence. This flavoured digestive liqueur from the Haute Provence region captures the spirit of provencial flavours. Served as a digestif, chilled or added to coffee. In the kitchen, Farigoule de Forcalquier marries well with grilled chicken and flambeed brings out the flavours of gambas or large prawns. Also useful for deglazing the pan in a rabbit sauce. 40% ABV. 500ml.

Its a rather more fruity nose with aromas of tropical fruits and notes of toasted oak

PALATE: Round and harmonious

floral then fruity and subtle

with bottle age conferring elegance and integration to the fine-grained tannin

leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production

Palate - Soft

The finish is medium-long

The Paul Bara is all refined elegance and great intensity of flavor

It was then hand sorted again in the winery before being transferred into small stainless-steel fermenters
